Asparagus Frittata

This simple meal is fast to prepare and lets you enjoy delicious fresh asparagus.

  • 1 Tbsp olive oil
  • 6 medium eggs, lightly beaten
  • 1 freshly ground black pepper, to taste
  • 2 bunches asparagus, chopped
  • 4 slices ham 97% fat-free, chopped
  • 3 Tbsp chopped parsley


  1. Heat oil in a non-stick frying pan. Lightly beat eggs with pepper. Add asparagus, ham and parsley. Combine well.
  2. Pour mixture into heated frying pan and cook over low heat until nearly set. Place under grill to cook top until golden.


Serve with a fresh garden salad.
