Banana Toasties

A healthy snack in a hurry from the 'Healthy food fast' cookbook.

Ingredients:
  • 1 small egg, beaten
  • 1 tsp orange juice
  • 1 Tbsp reduced-fat ricotta cheese
  • 1 tsp caster sugar
  • 1 banana, sliced
  • 1 Tbsp sultanas
  • 1/4 tsp cinnamon
  • 4 slices multigrain bread
Directions:
  1. Combine egg, juice, ricotta and sugar. Add banana, sultanas and cinnamon and mix together. Lightly spray sandwich maker with oil. Place two slices of bread on the sandwich maker, divide mixture over the two slices, top with remaining slices of bread and toast until heated through and egg is cooked.
