Basil and Lemon Chicken Thighs

This luscious chicken recipe makes a great meal any night of the week!

  • 2 Tbsp French mustard*
  • 1/4 cup natural yoghurt, low-fat*
  • 4 chicken thighs fillets, trimmed
  • 1/2 grated rind lemon
  • 1 lemon, juiced
  • 4 Tbsp chopped basil
  • 1 freshly ground black pepper, to taste
  1. Combine the mustard and yoghurt.
  2. Place chicken thighs in a covered oven proof dish. Pour yoghurt mixture over chicken. Sprinkle with lemon rind, juice and chopped basil. Add black pepper to taste. Cover.
  3. Cook in a moderately hot oven (190ºC) for 25 minutes.
  4. Serve with a fresh salad and baked baby potatoes, if desired.
