Spice up your next stir-fry - but don't worry, you can
make it as hot or mild as you like!
Ingredients:
500 g raw prawns
1 Tbsp olive oil
4 spring onions, finely chopped
1 Tbsp chopped fresh basil
1 red chilli, desseded and finely chopped
2 cloves garlic, crushed
1 green capsicum, finely sliced
1/2 continental cucumber, finely sliced
3 roma tomatoes, sliced
Directions:
Shell and remove veins from prawns. Heat oil in a
saucepan.
Stir
in spring onion, basil, chilli and garlic. Cook for
about 1 minute. Add vegetable pieces. Cook for a further
1 minute.
Add cleaned prawns. Stir-fry prawns until pink.
Serve
prawns and vegetables immediately. Accompany with fresh
crusty bread, if desired.
