Chilli Prawns and Vegetables

Spice up your next stir-fry - but don't worry, you can make it as hot or mild as you like!

  • 500 g raw prawns
  • 1 Tbsp olive oil
  • 4 spring onions, finely chopped
  • 1 Tbsp chopped fresh basil
  • 1 red chilli, desseded and finely chopped
  • 2 cloves garlic, crushed
  • 1 green capsicum, finely sliced
  • 1/2 continental cucumber, finely sliced
  • 3 roma tomatoes, sliced
  1. Shell and remove veins from prawns. Heat oil in a saucepan.
  2. Stir in spring onion, basil, chilli and garlic. Cook for about 1 minute. Add vegetable pieces. Cook for a further 1 minute.
  3. Add cleaned prawns. Stir-fry prawns until pink.
  4. Serve prawns and vegetables immediately. Accompany with fresh crusty bread, if desired.
