Chilli Tomato Pasta

This is a very versatile low-fat recipe. You can serve the sauce over pasta, top fish or chicken with it, or use it in many other favourite dishes.

  • 400 g pasta
  • 6 ripe tomatoes, chopped
  • 2 Tbsp tomato paste
  • 1 tsp clove garlic, crushed
  • 1 onion, chopped
  • 1 red chilli, deseeded and sliced
  • 2 cup chopped cup mushrooms
  • 1/2 cup white wine
  • 1 Tbsp freshly chopped basil


  1. Cook pasta according to directions on the packet.
  2. To make sauce, place tomatoes, tomato paste, garlic, onion, chilli, mushrooms and wine in a saucepan. Simmer, uncovered, for about 20 minutes. Before taking off heat, add basil. Serve hot sauce over pasta.
  3. Sprinkle with Parmesan cheese to serve, if desired.
