This is a very versatile low-fat recipe. You can serve
the sauce over pasta, top fish or chicken with it, or
use it in many other favourite dishes.
Ingredients:
400 g pasta
6 ripe tomatoes, chopped
2 Tbsp tomato paste
1 tsp clove garlic, crushed
1 onion, chopped
1 red chilli, deseeded and sliced
2 cup chopped cup mushrooms
1/2 cup white wine
1 Tbsp freshly chopped basil
Directions:
Cook pasta according to directions on the packet.
To make sauce, place tomatoes,
tomato paste, garlic, onion, chilli, mushrooms and
wine in a saucepan. Simmer, uncovered, for about 20
minutes. Before taking off heat, add basil. Serve hot
sauce over pasta.
Sprinkle with Parmesan cheese to serve, if desired.
