Farmers Frittata

A delicious potato and bacon frittata!

  • 2 Tbsp olive oil
  • 2 Tbsp potatoes, diced into 1cm chunks
  • 2 lean bacon rashers, diced
  • 6 small eggs, lightly beaten
  • 1 salt and freshly ground black pepper
  • 3 Tbsp chopped parsley
  • 1 oil spray
  1. Heat oil in a heavy based frying pan. Add potatoes and bacon. Cook over a medium heat for 5-7 minutes or until potatoes are tender. Drain well on paper towel.
  2. Add salt, pepper and parsley to beaten eggs. Tip the potato mixture into the eggs and mix well to combine. Spray oil in a frying pan, pour in the mixture and cook over a low heat until nearly set.
  3. Place under a pre-heated grill and cook the top of the frittata until golden and set.
