Middle Eastern-Style Rice Mix

An appetizing mix of beef, chickpeas, rice and spices.

  • 4 spring onions, chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 400 g lean beef fillet, cut into strips
  • 4 cup cooked basmati rice
  • 310 g can chickpeas, drained
  • 1 Tbsp lemon juice
  • 1/2 red capsicum, finely diced
  • 1 cup lowfat yogurt
  • 1 Tbsp cornflour
  • 1/2 tsp paprika, for sprinkling


  1. Cook onion, cumin and cinnamon in a large non-stick frypan until softened.
  2. Add the beef, cooking until browned and cooked.
  3. Add the rice, chickpeas, lemon juice and capsicum, stirring until heated through. Fold through combined yogurt and cornflour, heating without boiling.
  4. Sprinkle with paprika. Serve warm or as a cold salad.
