Steak with Sweet Potato Chips

Juicy sirloin topped with tomato relish on a bed of crisp sweet potato discs. This recipe has been favourably reviewed by dietitians from Diabetes Australia-NSW.

Suggestions:

Adjust recipe for picky eaters by omitting cumin, slicing steak thinly across the grain, and offering tomato sauce in a small bowl for dipping.

Ingredients:
  • 4 sirloin steaks (150g each serve)
  • 750 g sweet potato, peeled
  • 1 Tbsp cumin
  • 15 mL olive oil

Directions:

  1. Slice sweet potato thinly, toss to coat with cumin, oil and salt. Place on a hot barbecue plate or pan, cook until tender and crisp.
  2. Lightly brush sirloin with oil, and cook steaks to preference.
  3. To serve, place sweet potatoes on the plate, top with steak.
Variations:

Delicious served with a spoonful of tomato relish, and a green salad on the side. Serving suggestion not included in nutritional information.
