An easy oriental-inspired salad. Try it at your next
barbecue.
Ingredients:
1/2 cup chopped fresh mint
1/2 cup chopped fresh coriander
1/2 cup chopped fresh basil
1 red onion, sliced
2 Lebanese cucumbers, seeds removed and thickly sliced
1 red capsicum, diced
500 g rump steak
1 Tbsp sweet chilli sauce (or to taste)
1 chopped fresh chilli to taste
1 Tbsp peanut oil
1 Tbsp fish sauce
1 lime, rind grated & juiced
Directions:
To make the dressing, combine the peanut oil, fish
sauce, lime rind and juice in a jar. Shake well.
Arrange salad
ingredients in a large bowl. Grill or barbecue steak
to taste. Slice diagonally into thin slices. Add meat
and dressing to salad. Toss gently. Serve immediately.
