Apple & Rice Pudding

A simple combination of apple, rice, sultanas and cottage cheese.

Ingredients:
  • 2 cup cooked brown rice
  • 410 g can pie apple
  • 1/4 cup sultanas
  • 1 1/2 Tbsp honey
  • 1 Tbsp lemon juice
  • 1/4 Tbsp lemon rind
  • 4 Tbsp lowfat cottage cheese
Directions:
  1. In a bowl combine rice, apple, lemon juice, rind, sultanas, honey and cottage cheese.
  2. Spoon into two serving dishes and chill well before serving.
