This luscious chicken recipe makes a great meal any
night of the week!
Ingredients:
2 Tbsp French mustard*
1/4 cup natural yoghurt, low-fat*
4 chicken thighs fillets, trimmed
1/2 grated rind lemon
1 lemon, juiced
4 Tbsp chopped basil
1 freshly ground black pepper, to taste
Directions:
Combine the mustard and yoghurt.
Place chicken thighs
in a covered oven proof dish. Pour yoghurt mixture
over chicken. Sprinkle with lemon rind, juice and chopped
basil. Add black pepper to taste. Cover.
Cook in a moderately
hot oven (190ºC) for 25 minutes.
Serve with a fresh
salad and baked baby potatoes, if desired.
