Heat oven to 200°C. Cut
potatoes lengthways into 1cm thick slices. Bake on
a greased tray for 15 minutes.
Remove potato from oven and top with tomato paste,
ricotta cheese, capsicum, herbs and Parmesan cheese.
Bake for a further 10 minutes or until golden brown.
Serve immediately.
Variations:
Ideal for lunch or a light dinner. Serve with a green
salad.
