Mini Pizzas

Great for the whole family!

Ingredients:
  • 2 potatoes (such as Ruby Lou)
  • 3 Tbsp tomato paste
  • 100 g ricotta cheese
  • 1/2 green capsicum, chopped
  • 1 Tbsp dried mixed herbs
  • 1 Tbsp grated Parmesan cheese
Directions:
  1. Heat oven to 200°C. Cut potatoes lengthways into 1cm thick slices. Bake on a greased tray for 15 minutes.
  2. Remove potato from oven and top with tomato paste, ricotta cheese, capsicum, herbs and Parmesan cheese. Bake for a further 10 minutes or until golden brown. Serve immediately.
Variations:

Ideal for lunch or a light dinner. Serve with a green salad.
